Farmers Market Meal – Ratatouille

Hot Pepper Ratatouille
From the Silver Palate Cookbook (with some modifications)

Perfect Farmer’s Market in August meal. With a good variety of vitamins and minerals and fresh picked veggie flavor. We had brown rice with it but I think couscous might be better, or warm tortillas. With the exception of the tomatoes and spices, everything was purchased in one trip to the High Ridge Farmer’s Market.

1/2 cup mild olive oil
1 large yellow onion, thinly sliced
6 large garlic cloves (or maybe 8 )
1 large eggplant, peeled cut into one inch cubes
1 sweet red pepper, cored, seeded, cut in 1/2 sqaures
4 jalapeno peppers, seeded and minced
2 yellow summer squash, cut into 1 inch cubes
1 tbsp oregano (maybe a little more)
2 tsp ground cumin
salt, to taste
24 cherry tomatoes, halved (we used 12 small tomatoes cut in quarters)
3 tbsp cilantro (or maybe a tbsp more)

1. Heat oil over medium heat. Sautee onion 10 minutes
2. Add garlice saute 5 more minute.
3. Add peppers, squash, oregano, cumin and salt. Simmer covered, medium low 25 minutes.
4. Stir in the tomatoes, simmer 10-15 minutes more.
5. Stir in cilantro and serve.
